What would most likely happen if a person increased the amount of saturated fat in his or her diet

Saturated fats(aka animal fats) are fats that are solid in room temperature, such as butter and cheese. They are considered to be bad for u in large quantities compared to unsaturated fats(aka plant fats/oils).

They raise the level of cholesterol in your blood(particularly LDL/“bad cholesterol”). High levels of LDL in your blood severely increases the risk of heart disease and stroke.(they basically stick to the walls of arteries and make it harder for blood cells to pass through and could completely cut off their pathway. If this happens in a coronary artery, oxygenated blood will not get to the heart muscle and cells will start to die which is how someone has a heart attack or stroke.)
