In French style, all the different dishes were placed on the table at the same time and in precisely prescribed places for each course. Guests helped themselves to nearby ones without moving their plates, passing their plates to neighbors for food out of their reach as needed. For large dinners, this meant it was impractical for guests to sample every dish. Therefore, it was important to have interesting dishes near each guest.
This 1760 painting by Martin van depicts the banquet at the in Vienna before the marriage of the future Joseph II to Princess Isabel of Parma. As with other aspects of 18th-century royal life, such as embankments (morning rituals), noble courtiers were required to attend these formal meals. In the painting, the Austrian royal family sits on a slide that rises like a stage. There are multiple servants per guest. It is a typical abundance at such state banquets.
