Baehr is talking about the disease and lack of other nutrients in genetically modified crops.

What is nutrients?

"A nutrient is a substance used by an organism to survive, grow, and reproduce (in order words it helps in development and normal functioning of our body."

What do you mean by genetically modified?

"Genetically modified foods are those food that comes from an organism whose genetic material/ DNA has been altered/ modified and they differs from their naturally occurring form."
For example: there are many types of sugar available in markets that are made from genetically modified sugar beets.
Such technique can cause deletion and addition of some proteins which are either beneficial or harmful.

Hence, the genetically modified foods and crops can be dangerous to use as it may or may not have certain nutrients.
