Well if your making an artistic piece of the word grateful then its best to show people (or animals) showing signs of gratitude, like gifts, or if you want to nail it, then make something that involves thankfulness, like a Thanksgiving scene or something along those lines. Personally I would likely go for something that is color vibrant, but in a calm way that isn't overbearing. Remember, gratitude is shown when u show thankfulness and appreciation for something, regardless of what it is.
