Most fats and fat-soluble nutrients are absorbed and carried through the lymphatic system.
In the digestive system, absorption of digested food takes place in the intestine. To increase the surface area for absorption, the small intestine contains tiny projections called microvilli. Each of these microvilli contains blood vessels that absorb digested food and nutrients like carbohydrates and proteins into the blood stream and takes them to the liver through the hepatic portal vein. As for fats and fat-soluble nutrients though, they do not take this route - their molecules are just too big
Instead, fats and fat-soluble nutrients are absorbed through a different route, the lymphatic system. The microvillus in the small intestine also contains a vessel called the lacteal. This vessel is used for absorption of fats and leads to the lymphatic system. The molecules of fat are then further broken down and deposited in the heart, where they are absorbed into the blood vessels.
