In Britain, as the Industrial Revolution gathered pace, the populations were increasingly drawn to the cities. Families were often living in very limited accommodation often without a kitchen or means of cooking a meal. In order to cook food they used local cookhouses (and sometimes bakers) that they could collect and serve up at home. There was a huge trade in convenience foods from established shops and stalls to individuals walking the streets with trays of food
