Leon and Sara are arguing over when the best time is to degrease soup. Leon says that it's easiest to
degrease soup when it's boiling. Sara says it's easiest to degrease soup when it's cold. Who is correct?
A. Leon is correct.
B. Neither Leon nor Sara is correct.
C. Both Leon and Sara are correct.
D. Sara is correct.

I would probably say Leon is correct, that the best time to degrease the soup would be when the soup is boiling. Now we have to remember that grease pretty much is like oil so what would happen to the grease when it turns cold? It would become harder and would probably stick itself to the soup already. So with that said, it would be easier to degrease the soup while it is still boiling because it is still not embedded to the soup. 

Answer: A Sara is correct.

Explanation: It's much easier to degrease soup when it is cold. You can scrape the fat of the top or the soup or crack open the fat and pull it away for the liquid. It will not stay attached because fat is water soluble and floats on liquids. And even save this later for a roux. It's much more difficult to degrease soup when it is hot. Unless you skim the top before the soup over boils. Protip: You don't want your soup to boil more than a couple of minutes max. Otherwise you begin to loose complex flavors. Simmer, don't over boil.
