- Also, we need minerals in the right quantities. Taking them directly from the soil can be toxic to human health.
Literally eating rocks can be damaging to human health. For humans to tap from the minerals contained in the earth's crust, they depend on plants.
Plants have stems and roots that go deep into the soil and take up vital minerals like potassium and calcium.
When humans cook and make these plants edible, they can benefit from the minerals they contain.
